Your Guilt-Free Vegan Coffee Pudding

This vegan coffee pudding is rich, dark and ridiculously easy to make. No dairy. No guilt. Just pure café-quality comfort in a bowl 💅

We are using our Munro pods for this recipe. It brings a bold, chocolatey depth that makes this pudding elite.

What you need:

💟 2 shots of Pod & Parcel Munro espresso (brewed and cooled)

💟 1 cup oat milk

💟 3 tbsp cornstarch

💟 1/4 cup maple syrup

💟 1 tsp vanilla extract

💟 Pinch of sea salt

How to make it:

  1. Whisk the cornstarch and a splash of oat milk in a bowl until smooth (lumps are for amateurs)

  2. Pour the remaining oat milk, espresso, maple syrup, vanilla and salt into a saucepan over medium heat (yes, you actually have to use the stove)

  3. Stir in the cornstarch mixture (focus, put the phone down)

  4. Whisk continuously until it thickens into a rich pudding (consider this your arm workout for the day)

  5. Remove from heat and pour into your favorite aesthetic mugs (the ones you bought just for Instagram)

  6. Chill in the fridge for at least two hours (patience is hard but necessary)

  7. Top with cocoa powder and serve cold 🥄
